Oven Roasted Asparagus

This Oven Roasted Asparagus recipe is salty and savory, the roasting method kills the natural bitterness of asparagus. Try it next to grilled fish, chicken or lamb. Asparagus is part of the dark green vegetables family, an impressive low calorie intake of 20 calories per cup, 2 grams of protein, 60% folacin, 38% vitamin K and 20% vitamin C. This vegetable has become one of my favorites and can be cooked a lot of different ways. 

 

 

 

INGREDIENTS:

  • 1 bunch of asparagus (thicker stalks is best)
  • 2 Tbsp. olive oil
  • 3 Tbsp. balsamic vinegar
  • 2 Tbsp. lemon juice
  • Kosher/sea salt, to taste
  • Fresh ground organic black pepper, to taste
  • Garlic (minced), to taste

DIRECTIONS:

Wash asparagus first, then combine all ingredients in a large zip-lock bag and marinate for 30 minutes. Bake on sheet pan at 400°F for 8-12 minutes depending on desired firmness. Remove from oven and let cool. Enjoy!
